Taco Night!

Yesterday was Tuesday; therefore, I made dinner! I went the easy route and prepared Tacos (ground beef, shredded fiesta cheese, lettuce, sour cream, salsa and guacamole) and Mexican Rice. Unfortunately there wasn't really anything that I made from scratch in this dinner other than the guacamole, which turned out pretty yummy! Here is the recipe:

Homemade Guacamole (makes a giant bowl, see pictures below)

Ingredients:
4 avocados, peeled, pitted, and mashed
3 roma (plum) tomatoes, diced
3/4 cup onion, diced
1/4 cup cilantro, chopped
2 teaspoon garlic, minced
1 lime, juiced
1-2 pinches cayenne pepper (optional)
1 teaspoon salt

Directions:
1. Mash together the avocados, salt, and lime juice.
2. Mix in tomatoes, onion, cilantro, and garlic. Stir in cayenne pepper.

For best flavor, refrigerate for 1 hour before serving.
